One of our most representative product for the Salento the area in the south of Puglia is most definitely the Paparina vegetable. It is a wild vegetable that was discovered and harvest mostly after the war, when food and recourses were scarse.
A discovery then but still until today a vegetable that is grown and harvest in the fields of Salento and a real delicacy of the Salento cuisine.
What is Paparina
The paparina is simply put the red poppy plant that is harvest in between end of January and mid April, shortly bevor the flower blooms and would make it non edible. Our preparation remained true to the antique recipes of the dish.
After careful selection the paparina is washed and slightly fried in the pan with extra virgin olive oil, chili peppers, celline olives and a pinch of salt.
It is an ideal dish to taste the full flavor and aroma of Salento and only needs a bit of warming up and some warm bread to be fully enjoyed, It can however also be a delicious side or add-on to your salads.
It is packaged in 12pieces box à 190g jars and is best stored in a dry and breezy environment away from heat sources. Once opened we recommend you store it in the fridge.
As the majority of our products the paparina has a expiration of 2 years starting the production date.
